All Natural Fruit and Nut Energy Bar Recipe
Have you every tried the cranberry almond Kind Bars? Well, they’re quite delicious. But expensive. So I set out on a mission to create my own version. Behold my all natural fruit and nut energy bar recipe!
Don’t be too impressed…they’re insanely easy to make.
These are all natural healthy snacks that will satisfy your tastebuds and moaning stomach! They’ve got protein, fiber, healthy fats, and dates, which will give your body an added energy boost. This recipe is extremely easy to adapt your own tastes so go ahead and experiment. All you really need are a few ingredients you like and ingredients that will hold them all together (like honey and/or puréed dates). Estimates are a little rough, so play around with it!
Interesting facts about dates: Did you know that dates (dried or fresh) are one of the best natural sources of potassium, an essential mineral needed by the body to maintain muscle contractions, and smooth functioning of the heart muscles? It’s also an important fruit used to break fasts after Ramadan in Arab countries as just a handful will increase the energy in a body that has had no nourishment for the day. What You’ll Need:
♦ 2 cups all natural dried cranberries
♦ 1 cup dry roasted unsalted almonds
♦ 1 cup dried pitted dates
♦ 1/2 cup halved roasted macadamia nuts
♦ 3 tbs honey (or enough that everything sticks together!)
♦ foil or parchment paper and a brownie pan
What You’ll Do:
Blend the dates in a food processor or blender until they’re itty bitty pieces and all sticky.
Add the ingredients together in a bowl and mash together with your hands until evenly mixed. If the ingredients don’t stick together, add more blended dates or honey until it all sticks pretty well.
Place the parchment paper or foil over the baking pan and add the mixture to it, spreading everything out evenly so the nuts are in a single layer.
Freeze for an hour or bake at 350 degrees for 12 minutes. If baking, let cool before taking out the bars and cutting them up. If you choose to freeze them, take them out after an hour and cut into bars. Store in the fridge for an easy summer snack to cool you down!
